Samidori is prized for the qualities matcha drinkers look for: a rounded umami character, gentle sweetness and luminous green colour. By choosing one cultivar, Ginzo lets its character speak clearly.

In traditional matcha craft, tea plants are shaded before harvest. The leaves are then steamed and carefully dried into tencha—the leaf material made specifically to become matcha.

Ginzo's tencha is stone-milled into an exceptionally fine powder. The process creates the soft texture that allows matcha to suspend in water and become smooth and creamy when whisked.
